The team has started working on this.
If you have some ideas on how it should work — it’s time to discuss it.
Remember, text has more parameters than just font family and size. Document Profiles allow to set any of these using text styles, but editing the profiles them is a long journey. Doubling all parameters would be cumbersome.
How should it differ compared to InDesign’s approach? What other default parameters other than font would you need to alter and how should the solution would apply to those? Please help to make properly.

Also, please add these two features: 1) base a paragraph style in other custom paragraph style and 2) make a character style apply only one single feature, like color, without applying also a font and a style (bold, italic, roman)

Absolutely agree. The current paragraph and character styles are not a very useful feature because of this. Any Web browser can understand a CSS style that simply applies a font color using a <span> tag, but Illustrator character styles add a lot of basic stuff that make the feature behave as a bug.

I can't create a character style that simply applies a color or a font variation (Bold, Italic) as you can do in InDesign. Illustrator ALWAYS uses a base character style that applies a font size, a font family, etc. So basically character styles are non usable.

Same bug here! But I think there is no option to update the data file. The "Update Data Set" is not intended for reimporting updated CSV or XML files, but for updating the Data Set with the current data in the document.
Same issue here. Using Mac OS 11 in a MacBook Air M1
