The latest version of Illustrator now allows you to manually control the behavior with the 'Suffix' option in the Export As dialog. Please check if it it works for you and comment back if it does not.

This is fixed in 27.1.0 Prerelease build-GM candidate build 2, available in Creative Cloud Desktop Prerelease section.
As part of the fix, we have added suffix checkbox in ExportAs dialog to toggle on/off the functionality.
An error occurred while saving the comment KB Brown commentedI also agree that there should be a checkbox to opt in to the naming conventions of artboards if you need them. My colleagues and I thought this was a bug rather than an intentional decision. We had to downgrade back to an older version because we use these export settings as a major part of our workflow, and it would waste a lot of time to manually rename every export (hundreds everyday) On the other hand I can see how annoying it would be to have -01 added after every export when you don't need it. Surprised there wasn't a checkbox for this sooner to appease both sides.

Would really love to see this as a toggle option. My team has had to roll back to older versions of Illustrator because this decision really impacts our workflow. The workaround being to "type it yourself" is exactly the kind of small annoyance most people (including OP) are trying to cut out of their workflows. I'm guessing that a checkbox to turn this off/on would make everyone happy.
