I am happy to share that we have fixed this bug in our latest release – 27.1.1 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

As stated at https://community.adobe.com/t5/illustrator-discussions/color-difference-between-cpu-gpu-previews/m-p/13322063, this issue is a Mac-only problem for Ventura on Silicon chips.
A workaround for now is to use CPU preview or run the app using Rosetta or open as Intel or roll back to Monterey.

Here we go, the first Beta version with the Dimension tool. Still very basic, but more features are to come. Please try the Beta 27.7 (available in the Beta section in your Creative Cloud Desktop application), test the tool and give the team your feedback here in comments. and refer to roadmap to see what will be added later.

Same here, in our case for all Illustrator files that have placed .ai files (with PDF preview selected).

My workaround is by enabling the setting first in the Preferences, and then again disabling it. It actually disables the function then, but you need to do it for every other document over and over.
