The latest version of Illustrator now allows you to manually control the behavior with the 'Suffix' option in the Export As dialog. Please check if it it works for you and comment back if it does not.

Yes, the Recolor dialog does not have its own undo stack, and all changes are permanent. Since Recolor is often used as an experimentation tool, this behavior limits the freedom and forces users to avoid it and loose applied settings.
The team is now aware of the situation and hopefully some changes will be made.

I am experiencing this issue as well. Using AI 25.1. I tried Egor Chistyakov's suggestion to make compound path/hold Option/Alt while clicking Unite to enable the Expand, and then click that. The result was no different for me when I did that.
What gets me about this is that it worked just fine with other shapes in my document, but there are a few shapes that it will not merge.
Adding the ability to zoom and pan around the artboard area while working in recolor artwork panel would be so helpful! Sometimes I have a hard time seeing what color has changed and want to zoom in and can't, or want to zoom out to see the work overall and can't do any of these things while recoloring artwork right now.
