The recently announced change pushed into Beta 28.6.578 refers to this similar request: http://illustrator.uservoice.com/forums/333657/suggestions/35253820
The users can now use save custom presets within the Saved tab in the New Document dialog (modern one, not the legacy one). Please provide the dedicated feedback there.
As for the ability to change the existing predefined sizes for each document profile (Print, Web, etc,), like A1, A5, etc, — this is not yet available. Stay tuned and sorry for the misfire.

Asset export dialog does not have this option to export each file as a separate file it only has option on all artboards in one file, range of artboards or selected artboards in the dialog or the whole of document into one pdf file.
I am moving this request as a new feature requestAn error occurred while saving the comment Bob commentedSave as PDF with Illustrator editing checked saves all the artboards in the document, even when you chose to export only 1 artboard. These pages are not viewable in Acrobat but are if you open the PDF in Illustrator.
Export for screens > Artboards - has the same result.
Export for screens > Assets - this is the only option which works as expected.It is great to be able to save a PDF with editing retained, as clients can view the file without Illustrator, and forward the file to other designers confident they know what the file contains.
The attached file was Save As PDF with only the cyan artboard selected. Open in Acrobat and Illustrator to see.

Hi Everyone,
This functionality has been shipped in June-2021 version of Illustrator.
The option "Paste without Formatting (Alt+Ctrl+V)’ has been added to the ‘Edit’ Menu.

Hi Everyone,
This functionality is available in our latest release build – 27.6.1.
Color Model selection for JPG is available in Export For Screens -> Advanced settings. Illustrator will allow you to choose - RGB, CMYK or Grayscale color model.

Hi Everyone,
This functionality is available in our latest release build – 27.6.1.
Illustrator remembers the last preset used for saving PDF files and keeps it as the default preset.

Latest Beta Build 29.2.34 now adds Eyedropper in the Color Picker dialog to allow us pick colors from artwork.
Please try to test it and comment on if it works as you expect.

I am happy to share that we have shipped the Bullets and Numbering in 26.4 update for Illustrator. It’s a phased rollout so you may not see 26.4 update yet but it would rollout globally in a day or two.

We have done further updates to Dimension tool with recently released version - 28.3
You can create and use your custom scale for dimension, hide or show units on dimensions and dimensions are now sticky to the object - they transform as well when you transform the object.
An error occurred while saving the comment Bob commentedAcrobat Pro has the exact same thing in it's Measure tool. Be nice to bring that function to Illustrator.

KS I agree with your suggestion, a consistent experience makes great sense, and with that in mind perhaps you should have a look at the Affinity Suite.
However I disagree with your tone, surely if a customer spoke to you in this way you'd put their suggestion at the bottom of the pile.
