The intended way of setting a default font is to edit document profiles. These files are located in folders like 'C:\Program Files\Adobe\Adobe Illustrator 2023\Support Files\Required\New Document Profiles\[language]\' on Windows and 'Macintosh HD > Applications ▸ Adobe Illustrator 2020 > Support Files > New Document Profiles > [language]' on Macs.

Make a copy of the one you want to use someplace else, open it in Illustrator, make your changes, replace the original and then use it when creating a new file.

There are many tutorials on the web about managing these, like this one: https://productivista.com/new-document-profiles-saves-your-default-settings/

However, this way indeed is not the most discoverable. Please continue to vote and leave comments if you want this to be improved.

You are right, it is confusing.
Firstly, I understood very well everything you explained earlier.
I have been an Illustrator user for almost 30 years and know something about it.

It is just that I didn't realise (and would never have realised without you) that for a text object that has a fill and stroke colour set at the OBJECT level, I must ADD ANOTHER colour in the appearances palette just to be able to change their order.

By the way, this order should be reversed by default for text objects - it is a typographical mistake to give an outline over a fill for a text. But this is other story.

Once more - thank you for the explanation, but I will claim that the way it is working isn't right, and should be fixed, or at least commonly known over the internet.

Don't you think Egor, that adding "new stroke" and "new fill" to the text object which has white fill and a black stroke (just for example) is stupid idea?

Yes it works (I came up with this doing last screenshot for you), but still, I think this is a rather bug than a feature ;)

I really appreciate your effort Egor.
Unfortunately, you can see below, how my appearance panel when I select my normal type object looks like.
That's why I tried to do everything at "character level".

    here you are.
All I do is a simple dragging with the mouse.

The most frustrating is, that I know it works for some people. But for me it is not working for many years. And I cant find any clue why.

no. "reverse path direciton" isn't new command, I remeber it using illustrator 10, or may
    be even version 8.

But you're right, displaying path direction is realy usefull.

with text selected with "black arrow" cursor i can see no fill and outline.
I can see fill and outline only when I select characters. But both "bars" seems to be fixed, and non movable in appearance palette.

    Cannot open list of typefaces.
Clicking on downarrow next to field results in highliting whole field, next click switches highliting off.
Starting to type in field (to provide typeface name) just emptying the field and nothing more.
next field - typeface style (bold, italic etc.) works fine.
    Windows 10 20H2, Illustrator 25.2.1

It is not as straightforward as it may sound :) We have been working to take advantage of threads and other hardware such as GPU/Video RAM in places where it can make a higher impact. We are prioritizing areas that are slow instead of making a generic change and destabilizing the product. Product stability is the top priority for us and we have been consistently trying to improve it. We want to move with caution and make changes without compromising on the quality. Hope this helps.
