The solution to this problem is to disable the dedicated 'Show handles when multiple anchors are selected' option in Preferences > Selection & Anchor Display.

Usually it is off by default and does not interfere.

However, when it’s enabled, Illustrator displays all handles for all selected art when Group Selection tool is used, and it can lead to accidental handle changes when moving the art.

If you have it disabled but still have problems — please comment back.

While zoomed out using the general selection tool, it will act as the direct selection tool and will grab an individual node rather than the entire group.

I am holding out hope for a more powerful and accurate knife tool one day.. just don't cut small objects where I want at all.

This is STILL an issue if anyone reads this.
I'll take another stab at describing the issue:

If I draw a wave, there is a neon green outline(smart guide) and black color fill with no stroke.
When zoomed in to maximum value - the color fill varies by coloring outside of the lines and/or not making it all the way to the lines. This affects trimming overlapping shapes and creates arbitrary artifacts. This is affecting our print accuracy and work flow. Adobe, please contact me if you have any questions! The quicker this can be corrected the better. Thank you!

No problem. I use the pen tool to create a shape, then as you can see in the photo, the color fill goes beyond the line drawn by the pen tool. I may be wrong for calling this line a smart guide. Sometimes the error is more off than other times. Thanks

Color Fill is not inside the smart guides. It has been happening more and more often. I do not know if an update has changed a setting or what. Color is filling outside of the guides and it is making our screen printing seps take longer and longer to go in an visually align everything. not to mention creating an underbase taking longer due to having to fix areas where colors are overlapped or not overlapped. running 23.0.1

Sean, the new Beta release have an option to Intertwine objects, giving you a way to make knots like this. It won’t work exactly the way you described, especially for multiple strokes, but it’s going there.

Please try it and give your feedback.
