Illustrator respects the overprint when exporting raster files. Please follow the instructions in comments and reply back if it does not work for you.

There are now several separate requests made, based on the feedback in this thread:
1. Regarding adjustable color and opacity for 3D shadows:

All those who commented on the topic until October 16, 2023, are already added as voters there. If this is something you want to have for 3D and Materials in Illustrator — please upvote it. If possible — create new requests and bug reports about 3D, rather than commenting here inside. This will help the team to better prioritize efforts on making the feature better. I'm giving some opportunity to the new 3D and Materials but i'm increasingly frustrated with some new issues with map art options in ways that i was not with the old version.
The new version is a great and wanted evolution but needs more refinements and options when i apply it to some projects with revolve option:
- option to identify what part is wanted to apply map art;
- a scale to fit option (much needed with revolve option to make it match start with end;
- the new tool creates unwanted visually rendered artifacts;
- in the end it produces visually really low quality for pixel mapped art;Can you please improve much more those issues, please?

InDesign has it... even Macromedia Freehand MX had such thing nearly 20 years ago... shame on you lazy Illustrator!

I've tested it a few moments ago with a CMYK .jpeg and you're right. There is no difference .
So it seems like they have changed that behavior. Right now it exports JPEG with Overprint simulation even if Overprint Preview mode is on or off.
I didn't know about it... but it's ok because if document has paths with overprints they will output colors correctly.
