There should be a dropdown menu in the bottom left corner of the Glyph panel, which allows you to choose the font. Does it not get displayed for you? Please provide a screenshot, your machine specs, your version of Illustrator, if you can’t see one.

Somehow you got layer to have an appearance (you can see it by the filled circle marker next to its name in Layers). It means all object in this layer is going to have that appearance inherited, just like with assigning an appearance for a group.
Target the layer by clicking the appearance marker, open the Appearance panel and remove it to solve it.

Ben, using Width Tool you can edit width of strokes, inserting special markers in places where you need them to be wider/narrower, symmetrical or asymmetrical.
Perhaps you know about this already. If you do, but it does not solve you problem — please comment back.

Ignacio, most likely you have enabled Outline mode, with Cmd+Y. You can toggle it with a hotkey or via View > Outline / GPU Preview. You can see that by 'Outline' displayed in your document tab.
Please comment back if it solves it for you.

Carlos Canto wrote a small script to paste a selected object on all layers:
    https://community.adobe.com/t5/illustrator-discussions/pasting-into-multiple-layers/td-p/10735655
There are two versions of it there. None of them pastes on a selection of layers, but they can be modified to do so.
A workaround, true, but this is what we all have so far. Hope it helps.

Fe, the tabbing through layers while renaming had been implemented not so long ago, in case you missed this one.
As for the first half of the request — totally makes sense for me.

Liron, meanwhile we can use an external solution to achieve the second part of your request about controlling the order of the selected objects.

Send behind… & Bring in Front of… scripts:
    https://github.com/nimbling/Nimbling_Scripts#send-behind--bring-in-front-of

I bound them to hotkeys and use quite often.

I asked two my friends to check this on their Macs: to create an .ait file, put it in a freshly installed OneDrive and try to open it from there with a double-click. In both cases a new file got created, no the template opened.

Well, this needs more checking then, and probably an Adobe tech staff member to check one of your machine...

Hm, does not happen on Windows.
OneDrive folder is just a folder here, there is no difference with others, except for the Status column. Will ask some users if they have the same behaviour as you do.

Just to be sure: by 'opening' you mean double-clicking a file in the Finder? Not File > Open?

Illustrator offers two ways to achieve this already.

One is Symbols, which converts a desired object into a source graphic, which you can later use anywhere in the document. Once you change the symbol, the copies of it get updated.

The other one is Global Edit (Select > Start Global Edit, or a button which says 'Start editing similar shapes together' in the Control panel or 'Start Global Edit' in the Properties panel).

Both have some limitations, but hey fit into your request enough to think of it as closed. Do these work for you?

If not, what are the differences? What do you want more for these to suit your workflow? Either way, please comment back.

The tools you are describing exist in Photoshop. There were never tools like these in Illustrator, you must be confusing these two apps together.

However, I think Ai could benefit from having circular marquee and polygonal lasso, so please upvote this, if you want to see them developed.

There are several plugin tools which can help you with selecting objects, while this request get noticed.

    https://www.cool-selection.com

    https://astutegraphics.com/learn/update/select-like-a-pro-with-super-marquee

It’s up to you to decided if you want to use them, because both are paid tools.
