Illustrator has two commands to fit artboards.
One of them, 'Fit to Selected Art', requires a selection — obviously.
The other one, 'Fit to Artwork Bounds' — does not, but works for the entire artwork.
You can insert the one that you need in an action, using the 'Insert menu item...' command from the Actions panel’s flyout menu, and assign a hotkey to the action.
However, I believe the request is not about a hotkey, but a way to let Illustrator to 'Fit to the contents of artboard' command? Please comment back to make it clear.

Hi Everyone,
Thanks for this feedback. This has been avialble since June 2020 release (version 24.2). Now, when you’ll select a single object/group, Align To setting will default to Align To Artboard.

The most recent version finally has the Object > Distribute menu added.
Now both Align and Distribute commands can be accessed via menu and have assigned keyboards shortcuts to them.
The order of the commands though seemingly matches the one the panel has: horizontal first for Align and vertical first for Distribute. Also, Align To and Distribute Spacing commands are still missing in top menus, so please keep voting here to make them added too.

In latest version we can select multiple artboards and resize each one at once.

The latest Beta 29.2.38 now offers a way to see the distances between a selected object and an object hovered over / edges of an artboard.
- Click on the object you want to measure the distance from
- Press Opt/Alt and hover over the object that you want to measure distance to
- You can also hover over empty area to see the distance from the selected object and the artboard boundaries
Please try it and come back with the feedback.

You can now select multiple layers in Layers panel. Click the bars (they get highlighted blue) if you want to operate layers and not their content (e.g. to drag to reorder) or click their markers to select their content — circle (target ones) or square (selection ones) next to them. There is no real difference which to pick, but if you want to select a range of layers, using Shift, use target markers.

The latest Beta 28.8.0.37 now has this function back.
You can enable the mode using a button in Control Panel or in Properties, with the Artboard tool picked.
The option automatically enables Scale Strokes & Effects option temporarily.
As always, you can hold Shift to resize proportionally.
Please test it and comment back!
