The latest Beta 28.8.0.37 now has this function back.
You can enable the mode using a button in Control Panel or in Properties, with the Artboard tool picked.
The option automatically enables Scale Strokes & Effects option temporarily.
As always, you can hold Shift to resize proportionally.
Please test it and comment back!
An error occurred while saving the comment DR commentedTyping in an adjustment to width or height secondarily click and drag to resize and would be my preferred methods.

Both 'Fit to Artwork Bounds' and 'Fit to Selected Art' commands can be inserted in an action using the 'Insert menu item...' command from the Actions panel’s flyout menu.
This approach can be used to insert other commands which Illustrator skips while recording. You can read more about it here: https://helpx.adobe.com/illustrator/using/automation-actions.html
An error occurred while saving the comment DR commentedThanks for your feedback. I can set it up as a custom keyboard command but recording the action doesn't seem to work. I tried the actions method prior to posting.

As common practice I adjust every artboard to the same size as the art. Seems an easy add to one click auto adjust.

Hi Everyone, This feature was shipped in Illustrator 2020 version. Please go to Preferences>Selection & Anchor Display > and check ‘Select and unlock objects on canvas’. Enabling this preference will display a lock icon when you select the locked object.

We should also be able to save undo history pallets. That seems like an easy fix as well.
