We are working towards giving preference to Photoshop for editing linked images, if Ps is installed. This may mean the label showing as ‘Edit on Photoshop’ when an linked image is selected. The change does not affect OS level file type associations.

In CC 2019 (latest update 23.0.1), at 100% Zoom 1inch artwork would display at 1inch in physical (Print) size, on any display. If this doesn’t work right for screen design workflows, please use the checkbox Preferences > General > Display Print Size at 100% Zoom, to turn off the feature. Currently this feature works only on primary display, and there are plans of extending this to other attached displays.

Illustrator allows option to Simulate Color Paper, whereby user can pick any color as the background. (This is accessible from File -> Document Setup)
Does this help solve the described concerns?

The recently announced change pushed into Beta 28.6.578 refers to this similar request: http://illustrator.uservoice.com/forums/333657/suggestions/35253820
The users can now use save custom presets within the Saved tab in the New Document dialog (modern one, not the legacy one). Please provide the dedicated feedback there.
As for the ability to change the existing predefined sizes for each document profile (Print, Web, etc,), like A1, A5, etc, — this is not yet available. Stay tuned and sorry for the misfire.

you really should improve and snap and alignments. Really disappointing for a geometric vector design program. Consider that other software like Corel Draw, Affinity Design, the good old freehand this thing works much better, even free software inkscape works better.
Beyond "align to point" you should also make align, and intercept alone the curvature of the vectors, as "hook to object" of freehand. If external plug-ins like those of the Institute or other external scripts are able to implement these functions, to the great I would say, I wonder why mom never ADOBE can not? Do not you want to do it? can not do it? where is the problem? or does not want to rage against Astute ??
it is shameful for a software leader in the field as Illustrator that boasts 30 years, in my opinion NOT honored service that piti of many gaps like this and also slowdowns and a lot of machineness in working. Freehand was very, very, very, very, very, very, very, very, very, very well.
