Hi Alex,
Thanks for reporting this issue. Are you facing it with any specific font? Can you please share the details of the font and value of kerning that you applied in snapshot?

We are unable to reproduce this issue in house. We need your help in getting this issue reproducible.
Kindly provide some video and Test file(Via File→Package) with some steps with which you are facing issue and share with us in a zip file at sharewithai@adobe.com. Please mention the title of this issue as the subject of the mail.
Please Also let us know if you have been using any 3rd Party plugin while facing this problem.Since this is not a generic issue that we can reproduce at our end, we might need someone to look into your machine to figure out what is going on here.
If yes, then please do let me know about your available time so that I can schedule a connect session accordingly.

This only happens when saving an AI file.
The only solution that worked for me is to reset Illustrator Perferences: Open up Illustrator holding CTRL+SHIFT+ALT.Elron B supported this idea · -

When I tried to export my fonts from both softwares and test them in Illustrator, the problem still persists.
Seems like this is a problem in adobe implementation of variable fonts.I've attached a GIF to demonstrate the problem.

We have the fix available in the latest release. Please update Illustrator using Adobe Creative Cloud application to the latest build for version Illustrator CC 22.1.

I am happy to share that we have fixed this bug in our latest release – 24.1.2 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

An error occurred while saving the comment Elron B commentedIts so annoying when this happens. I had to force restart and then I lost my design. Please fix that. This happens every since I updated to CC.

A similar problem (not kerning, but spacing) is with any variable font I use in illustrator (26.0.1)
I use "Myriad Variable Concept" with "368-weight" and "86-width" set, as you can see the spacing becomes funky on that point.
This happens with some more random points with all different variable fonts I've been using, even in Hebrew.
This doesn't happen in the browser or in the font software I use, only in Adobe products.
