書き出し設定からjpgを書き出した時。
書き出し形式からjpgを書き出した際，裁ち落とし設定を入れていてもアートボードの大きさで書き出されてしまいました。2020では通常の書き出しができたので，2021のみのバグのようです。

最新バージョン「v26.2.1」でも検証いたしました。
書き出しダイアログで「アートボードごとに作成」オプションを有効にすることで、裁ち落としを含めたサイズで書き出されますので、ご確認ください。

文字パレットのサイズ変更がうまくいかない。
24.3にアップデートました。
クリックでサ文字イズを変更していると、途中でおかしな数字となり（以前は1Qごとに移行していた）、それ以上進まない。

ご報告いただきました「ver.24.3 での単位系［級］の場合のフォントサイズ変更」の問題ですが、単位系演算誤差に関する問題に起因しておりました。
すでに、最新製品版「ver.25.4.1」で解消されていることをご確認いただけます。こちらは解決済みとして、対応完了とさせていただきますのでご了承ください。

Unable to control third party applications with AppleScript
This is essentially the same issue as https://community.adobe.com/t5/indesign-discussions/indesign-16-3-2-not-authorised-to-send-apple-events-to-other-apps/td-p/12312871 except for Illustrator.
Illustrator is missing the NSAppleEventsUsageDescription key from its info.plist file. This prevents the system from asking permission from the user to send apple events from Illustrator.

Big Sur and native Effects gallery crash
Anybody else getting Illustrator CC2019 and 2020 to crash in Big Sur (beta) when accessing the Filter Gallery (eg. Effect > Texture > Grain)?
You don't even have to apply the effect. Simply opening that window will doom you to a crash.
Tested with latest public releases of CC2019 + 2020 and macOS 11 Beta (20A5384c) on 2015 iMac.

Text height is wrong
When you select a specific text height, it is not correct. Say for instance you select 1 inch for text height but in reality the cap height is .68 inches. We work at a sign shop and a lot of jobs require a specific text height. This is misleading when I pick 1 inch for text height and it is no where near 1 inch in height. Can you please make it where the text height corelates to the actual cap height of the text, otherwise this feature is useless.
2 votesLatest Illustrator releases have Font Height Options you can access form Character panel’s menu — they allow you to set font height as a capital / x-height specifically.
The functionality has some minor issues (regarding rounded stems for some fonts, keeping the chosen option between launches), but otherwise it is very good. Please try it!

Artboard > Fit to Artwork Bounds with clipping mask and raster effects
Resizing an artboard with Artboard Options -> Preset -> Fit to Artwork Bounds doesn't honor clipping masks or raster effects. The new artboard size includes artwork hidden by clipping mask, and excludes raster effects such as drop shadows.
2 votesIllustrator now honors raster effects such as clipped shadows, and fits to clipping masks instead of their clipped content, when using Fit to Artwork Bounds or Fit to Selected Art commands.
However, there is no option to not do that, and to ignore Use Preview Bounds option in general — the fitting always uses strokes. Circle size change when rotating
When I rotate a perfect circle, the size changes up to .004”. A 15”x15” circle, when rotated 17.184° becomes a 15.004”x15.004” circle. I know it may sound trivial, but I’m creating technical drawings that have to be accurate to the ten thousandths of an inch.

Empty artboard name which changes itself when artboard is resized
I have a simple template for business card, made long ago, with a single artboard inside.
Today I created new document based on this template and AI22 has shown this single artboard with no name (which was never touched in template and always was default 'Artboard 1'). It displays as 'Artboard 1' in Artboards paleette, but tag is missing.
Next, when I add height to this artboard in Control panel, it got renamed to 'Artboard 2', both in tag and palette.
If I undo this and make change again, it got 'Artboard 3' and so on.

Editing tabs in Paragraph Styles crashes Illustrator.
Open attached tab_bug.ai file. Open the Paragraph Styles window. Edit the "Windfall back cover" style. Select the Tabs section. Move the tab to the right. Hit OK. Illustrator crashes.
I've already reported this at https://illustrator.uservoice.com/forums/601447-illustrator-bugs/suggestions/31228633-demo-version-of-illustrator-crashes-constantly-de?tracking_code=a5435faf1626b3287df8c29b149793c7, but this is stripped down to the minimum possible case.

Variable font with Adobe World-Ready Composers
Variable font dont work with Adobe World-Ready Composers. (Only regular adobe composers) so no variable font on rtl launguage (working perfect on browser)

Can't assign keyboard shortcut to Properties panel
It is not possible to assign a keyboard shortcut to the new Properties panel because it does not appear in the Edit>Keyboard Shortcuts dialogue.

Embed Doesn't Show Up in New Properties Panel
The Embed option appears in the new Properties panel when a Linked object is selected, but doesn't appear when multiple Linked objects are selected.

Copy and paste object values error
9 times out of ten when I copy and paste a simple object like the one on this art board, it pastes as the objects text values. It is really annoying.

Disappearing Content
After zooming in or isolating objects, other objects disappear upon zooming out. I have to select and isolate invisible objects in order for them to reappear.

AI CC V 28.1 Windows 10 Extrusion (3D and materials) no more working for some objects
I am no more able to complete the extrusion of a disc object for which I previously removed parts of it using the pathfinder substraction tool. Substraction is working well, but extrusion is not. Once started, the extrusion process does not complete. I had to revert to Illustrator 28.0 to make it work.

Blank screen on start up and missed new features on new v. 27.6 (English language on Windows 10)
Just updated to the new version 27.6 in English language on Windows 10 pro, at the start up the home screen is totally blank (only the layout color instead of open, new file etc. buttons). Anyway I'm able to open files o new files from the menu. There is no trace of the new Ai features or of the other improvements coming with this new release. I tried both update from the previous version and install from scratch after cancelled the previous one but with no results.

Highlighted selection box not appearing for text
When I select text, the bounding box appears, but when I select actual letters/words to edit, there is no highlighted/selection box showing me that I am selecting characters and which one. It's like I'm playing a bit of a guessing game: let's see if I actually selected the letters I meant to, fingers crossed!
The picture attached shows through the character tool module that I've selected two slightly different fonts(same face & size etc, just different weight) but that the text itself doesn't appear to be selected. I've only selected the italicized to the blue text at the bottom of…
