Starting with version 29.3, Illustrator got the 'Embed permitted fonts for file preview' option in the Illustrator Options save dialog.
Currently it’s disabled by default, because there were multiple confused complaints on the changed behavior.
When missing in your current system, fonts will render as previews in the documents that were saved with this option enabled — it 'bakes' these outlines in. When we try to edit one though, we get a warning and the font becomes substituted, as before.

However, this is not 'Convert text to outlines on open' as we requested it. The option does not provide a way to do that for all the embedded outline previews, and Ai still doesn’t allow to select these at once. EGOR, my friend! This is Chris "The Captain" from the Illustrator Pre-Release team.
I didn't see an exact match of our issues here in UV, so I thought I'd make a post (since I had sent some samples in earlier to the team and it stalled). I've reattached them here.
The most challenging thing is that it's hard to recreate. It's just odd that it's happening on two totally different systems. Both running most recent versions of .Ai
I'll upload more samples when it happens again.

Illustrator allows to unlock individual objects on canvas, if you enable 'Select and Unlock object on Canvas' option in Preferences, Selection & Anchor Display section.
Also, you can right click on the spot that has your locked object, choose Unlock and then this item by its name, without enabling that option.

After using After Effects and Premiere Pro, I've become jealous of their Keyboard Shortcuts menus. It would be fantastic to have the same visual menu in Illustrator. Photoshop also, since it's not even possible to search for a shortcut.

There's a similar function in Photoshop, called "Lock Workspace". This is needed in Illustrator as well

Agreed. It would be great to have the same locking workspace functionality as available in Photoshop.
YES, AmyBeth! I was hoping there was already a UV for this. One of the best tools ever introduced, then it gets taken away : (
