Meanwhile, we can use a free Select Menu plugin from Graffix to select these and more: https://rj-graffix.com/downloads/plugins/#selectmenu
This would add several more menus in Select > Object, and symbols would be in Basic Art Types > Symbols there. -

An error occurred while saving the comment Judging by the fact you say it happens for both Ai and Ps, this might be an external problem — like a keyboard driver, or physical Alt-key malfunction...
Also I have to say about different approaches Ai and Ps use in handling a modifier: Ps requires the key to be pressed before the operation (and allows to keep the duplication mode if released while dragging), while Ai allows to hold and release it anytime. It probably does not matter here (but there is a request to unify or allow to customize the way it works: https://illustrator.uservoice.com/forums/333657/suggestions/44954005)An error occurred while saving the comment This definitely needs a video recording to see how it works (or does not) for you. Can you provide one, please?

An error occurred while saving the comment Global Edit is one way to go, if you want to replace similar objects with one another:
- Copy the object you want to replace with, then select one of many copies you want to replace and use Select > Start Global Edit command.
- Using Shift, unmark those copies you don’t want to affect.
- Isolate the targeted copy.
- Paste the copied object and position it correctly relatively the old object.
- Delete the old object.
- Exit the isolation and end Global Edit.
It may sound convoluted at first, but once you master the method, you’d be able to easily replace almost anything.
Global Edit has its limitations: it doesn’t work for images, text objects, clipped masks, linked objects, and third-party plugins.

Another solution, with a different UX approach, is to use FindReplace Art plugin by Astute Graphics — it allows to select any objects with a chosen one (https://docs.astutegraphics.com/findreplace/findreplace-art-overview).

Tried to find a way to 'bake' the fill into the appearance stack, but every trick I tried failed — the fill of the area type gets ignored anyway.The only way I can offer so far is to apply a fill to the to the area type object (not the path), put in under the characters, and convert it to a tight rectangle with Convert to Shape > Rectangle effect.
The only problem is the protrusion above, but it can be remedied with choosing a different First Baseline value in Type > Area Type Options, like Legacy, Leading, or Em Box Height.Please try it, and thanks for the report!

If you install these using the default method (with putting files directly into c:\Windows\Fonts\) — do these get added faster?Personally, I’ve been having a similar problem for decades now. Sometimes these do get added 'fast' (less than 10 seconds), sometimes it goes up to 30 seconds. Most of times Ai goes unresponding while these do get added. And yes, I do recall this behavior, with not seeing added fonts at all — but it stopped maybe a half a year ago...
Working on Mac feels a lot faster, but I never had the same amount of active fonts there. -

Ai has two types of general units: A) document-level ones, set within Document Setup dialog (same ones as we can set in the context menu for rulers), B) application-level ones, overriding units in ALL opened documents in Preferences > Units.
If you don’t touch the B option, and use only A while managing documents, and correctly choose the document profile and units when creating a new document — you should have no problems with keeping these chosen units when opening a document.
Is it the case? Please share more details. I design for both media as well, and it took me some time to figure this out — Ai is hardly clear about these.An error occurred while saving the comment Another request somewhat related to the problem:

Fixed and works as it should do in Beta 30.0.0.72 — please try to install it (or update if it’s installed) and verify if it works for you, before it gets pushed into General build.

An error occurred while saving the comment In the latest releases this is somewhat back. You can now use Shift and Ctrl with a click in target circles to select ranges and add/remove from the selection. No dragging though, but it’s still is much better then it used to be recently.

Since version CS6, Illustrator allows to align gradients on strokes with a dedicated set of Align Stroke buttons in the full expanded Stroke panel.
An error occurred while saving the comment The method in the screenshot is similar to freeform gradient Ai has, indeed, but the points are 'glued' to actual paths — something Ai struggles with.
I just expanded the idea, to be able to define a color per segment (or a selection of segments), with either smooth (like the screenshot depicts) or striped transition — something we can achieve in Ai by assigning two adjacent gradient stops the same value (Photoshop meanwhile just makes this with toggling the option — and there’s a feature request about having it in Ai: http://illustrator.uservoice.com/forums/333657/suggestions/47729306)Since detecting a centerline (the link to the request: http://illustrator.uservoice.com/forums/333657/suggestions/44614782) is not that straightforward if you are not a human, I’d suggest something like this to force Ai to flow a gradient in a shape Enis demonstrated. Defining just two segments would be enough for Ai to 'blend' these, very similar to manually building a centerline with a 1-step-blend — but interactively. The white segment would get blended to the black one, using the segments in-between as rails.

Indeed, variable width never really goes to zero and remains drawn as a zero-width collapsed outline.
But there are workarounds.
Please study the attached file and study the appearance stack for all three objects (and one more bonus solution).
Of course, it does not mean your idea isn't good (on the contrary), and these workarounds are complex enough to use them effortlessly. I merely propose these as a solution to these specific issues you have raised, which can work in some cases.An error occurred while saving the comment The file

An error occurred while saving the comment There is a Gradient Forge plugin, a part of Astute Graphics commercial plugin pack, and it allows to make the process of stacking stop less painful.
There is no dedicated option yet to quickly convert normal smooth gradients into this hard/stacked ones, but perhaps they will add it later. -

An error occurred while saving the comment That is odd... the Edit command should be available in this case... and in the case you have both an Intertwine object and something else selected — the Release command would have been active!
What do you have selected actually? Can you share the file or show a screenshot of you expanded Layers, at least, please? -

Disabled for me as well...
The workaround with Export for Screens and using PDF format there to export artboards still works.
