The team has revised the UI for Image Trace and reverted it to the way it looked in 27.0. So far this is only available in the latest Beta version, but it is planned to make it released soon.

The most recent version finally has the Object > Distribute menu added.
Now both Align and Distribute commands can be accessed via menu and have assigned keyboards shortcuts to them.
The order of the commands though seemingly matches the one the panel has: horizontal first for Align and vertical first for Distribute. Also, Align To and Distribute Spacing commands are still missing in top menus, so please keep voting here to make them added too.

Starting from the February 2024 release, version 28.3, this option is no longer enabled by default for new documents. If you had hyphenation enabled in an existing document, Ai will respect this.

Thank goodness. That new menu was TERRIBLE! At first I thought it was going to give you a preview of what it would actually look like (the art you were working on). But it was static, meant you needed to endlessly scroll through a bunch of pointless previews and placeholders.
Thank you so much for changing it back - I hope it hits the production version asap
