This is fixed in 27.1.0 build 2.
The suffix checkbox was added into the Export As dialog to toggle on/off the functionality.
If it doesn’t work for you today in the latest build — please make a comment.

Regarding color profiles it's all fine. No clipboard managers installed.
Unchecked Include SVG code on copy in Clipboard Handling, it seems that issue has gone so far, but we'll see, it was rather random occurring.
I've come across the guy with identical issues (colors and broken txt) on Adobe forums, but he claims that problem was solved by reinstalling Illustrator, so there was no further investigations.
