The team has started working on this.
If you have some ideas on how it should work — it’s time to discuss it.
Remember, text has more parameters than just font family and size. Document Profiles allow to set any of these using text styles, but editing the profiles them is a long journey. Doubling all parameters would be cumbersome.
How should it differ compared to InDesign’s approach? What other default parameters other than font would you need to alter and how should the solution would apply to those? Please help to make properly.

I have used the "intended method" and it is a deterrent to the task. Yes, there needs to be a way to do this.

Not only in an isolated group, but also if one selects all the objects in a sub-layer. The transform operates on the entire layer as if it were a (non-isolated) group. One has to add an additional object that can remain unselected whilst transforming each of the other elements.

Very quietly it got fixed.
The latest Ai version has this option as buttons instead of dropdown, and wrong 'horizontal' is nowhere to be seen.
The only thing is 'center' vs 'centre'.

Compare with InDesign's Text Frame Option called Vertical Justification. To echo Theresa Stoodley, this option is clearly mislabeled.

Help Bar is available only in the latest Beta (starting with 29.2) and Prerelease builds so far. As soon as the team decides it’s ready to be pushed into main build, you’ll be able to get it. At the moment you can install Beta build from CCD app, or just wait.

Starting v29.6, the measure tool snaps to other objects thereby giving you the ability to measure different dimensions quickly and accurately. Please upgrade your application to the latest build and let us know what do you think.

In case the AI team or some users misunderstand the request, it is NOT about raster effects resolution, but the assumed resolution of the document. For example, Illustrator's iPhone X preset produces an artboard nearly a meter tall by assuming the iPhone's 2436px long dimension has a density of 72ppi. Crazy. It'd be great to do vector artwork with real world dimensions in mind.

This problem is reportedly fixed (finally!) in the latest Beta Build 30.5.0.18. You can update and test if it’s truly gone.
However, please not there are some known issues with this particular build:
- Opening recent files from Home Screen Recent section is not working (opening recent files from File > Open Recent Files works fine).
- Generative Expand does not open its own HUD when used after Generate Vector, Generative Shape Fill, or Sketch to Vector. Instead, the previous tool's HUD is displayed and Generative Expand remains inaccessible. Workaround: Ungroup the generative content first, then apply Generative Expand.
- Half of Astute Graphics plugins can’t get loaded. Both teams are now aware of the problem.

InDesign's approach to the duties of paragraph and character styles as well as default behavior has consistent logic:
Paragraph styles as the primary control over text formatting with Character styles used only for *character level* exceptions within paragraphs. That means no paragraph level controls (like alignment) in character styles and no need of a "normal", default character style.
Defaults depend on document open state and/or what's selected:
In an active document with nothing selected, typographic choices become document defaults. With a text object selected, options are applied only to it. With no doc open, typographic settings become application-level defaults for future documents.
For consistency and elegance, I recommend this for Illustrator as well
