Help Bar is available only in the latest Beta (starting with 29.2) and Prerelease builds so far. As soon as the team decides it’s ready to be pushed into main build, you’ll be able to get it. At the moment you can install Beta build from CCD app, or just wait.

The intended way of setting a default font is to edit document profiles. These files are located in folders like 'C:\Program Files\Adobe\Adobe Illustrator 2023\Support Files\Required\New Document Profiles\[language]\' on Windows and 'Macintosh HD > Applications ▸ Adobe Illustrator 2020 > Support Files > New Document Profiles > [language]' on Macs.
Make a copy of the one you want to use someplace else, open it in Illustrator, make your changes, replace the original and then use it when creating a new file.
There are many tutorials on the web about managing these, like this one: https://productivista.com/new-document-profiles-saves-your-default-settings/
However, this way indeed is not the most discoverable. Please continue to vote and leave comments if you want this to be improved.

An error occurred while saving the comment Steve Laskevitch commentedIn case the AI team or some users misunderstand the request, it is NOT about raster effects resolution, but the assumed resolution of the document. For example, Illustrator's iPhone X preset produces an artboard nearly a meter tall by assuming the iPhone's 2436px long dimension has a density of 72ppi. Crazy. It'd be great to do vector artwork with real world dimensions in mind.

Leigh is very correct. I just wasted time trying to hunt down this new 29.1 feature. Glad I found this.
