Black boxes appear on top of anything I draw with the pen tool
If I try to draw something with the pen tool a black box will cover it, while I can still draw what I want, I can't see what i'm doing which makes it very difficult.
I've updated illustrator, my laptop, and tried new documents but nothing will change it.

Hey, I had this exact thing happen to me and I found out how to fix it! I think the problem is that your picture is linked and not embedded. I was working on a pretty heavy project and after a bit the black box bug started happening. I assume my computer was overloaded and couldn't handle rendering the photo completely. When I embedded it, the black box went away! It looks like your project is pretty heavy as well so I hope this will fix it!
