Variable Font Changes
While working with a Variable Font in Adobe Illustrator 27.2, everything works fine, and I save and close the file I am working on. The next time I open the file in Illustrator, the Variable Font changes to an italic version. There is no easy fix to revert the text other than to select and adjust it.

This is happening for me, as well, including in fonts like Apple SF Pro and Roboto Serif that are widely used.
It seems that there are a couple of important patterns:
- This happens in variable fonts that have separate but related roman and italic font files. It doesn’t happen in fonts that include a "slnt" axis, such as Inter or Acumin.
- This change occurs in custom instances, not named instances. For example, if I select a named instance like Roboto Serif Medium, it doesn’t get flipped to Italic upon restart. If I select a custom weight value, however, like wght=650, then it does flip to Italic.I have found that this bug occurs both in Illustrator v27.5 and v26.5.3, as well as Prerelease v27.6 (192)
