If this happens for you, make sure you have the same color settings setup in both versions (Edit > Color Settings).

I set up a very simple CMYK document and created two objects and then applied two different default gradients, a different one to each object. Adjust object1, the object2 remains as it was. Adjust the object2 , and object1 remains as it was after I first adjusted it.

Does this shift in color appear across the entire display, or only the art/objects within an illustrator document? (does it fade/desaturate the desktop image/etc also?)

The bug is no longer a problem in latest Illustrator releases. If you ever encounter this problem ever again, please comment back.
An error occurred while saving the comment Lance commentedThis has been an on-going issue/bug. Sometimes saving the document updates the behavior for that 'session', sometimes just opening a previously existing document will do it as well.
It's temporary but it happens each and every time the software is started.

The PNG file format does not support the CMYK process color model. I'd be very surprised if both your saved/exported PNG's weren't RGB images. If you need a CMYK file, you're better off using PDF or TIFF.
As for the colors changing, that depends on how the parent file (illustrator file) is setup. Are you working in RGB or CMYK? Some transparency effects and blend modes don't translate well to CMYK. Unexpected results are common when converting from one colorspace to another, especially when transparency and blend modes are present.
I think I see the problem areas in your example; the pinkish areas in the bottom of the image? Have you checked those vector objects for unintentional blend modes or overprints?

This is exactly how it works now — Alt+clicking a swatch applies it to selected gradient stop. Please comment if it’s not what you had in mind.

The solution is pushed into Global Availability build 28.6.
The Previewed Page is now the default option for the dialog.

Can you share some specific examples of others that have had / are still having this issue? I've experimented on my installation and cannot get the pathfinder divide tool to produce inaccurate results *right now* but could swear I've seen it do weird stuff in the past.
Maybe I'm not experimenting with the right kind of vector shapes.

Either your instructions for replicating this issue aren't clear enough, or my installation of illustrator 2022 on windows 10 does not suffer from this bug.
1. open new CMYK file
2. draw box with rectangle shape tool
3. assign CMYK colors in Color panel as 87-75-0-0
4. deselect box
5. select a different color swatch in the swatches panel
6. open color picker and enter CMYK numbers as 87-75-0-0
7. color is visual match to that used to fill the box from step 3.
I cannot duplicate the appearance difference even if I change the document color mode to RGB and start over at step 1. They still look the same, as in your AI 2021 screenshot.
