Thin strokes look jagged / uneven

Newest version of Illustrator has now changed my .001 cut size of a stroke in some places from a clean thin line to a jagged mess. Some of the former .001 lines are still unchanged? These are shared with clients and look horrible!
Running on Windows 10.

    Illustrator 2020 24.0.3
    macOS Catalina 10.15.2

    Need hairline stroke (.003pt) for one of my machines. When I outline Helvetica (Type>Create Outlines), and change the stroke to anything smaller than 1pt, the curves of the font blow out and create spikes. I've been using the same method for several years and this had only just now become an issue.

    Tried other fonts and only seems to happen on curves. If I try to use the file anyway and my machine does not recognize the file as having any data in it.

    Dude i am having the same issue.....Cut size for laser is going to be messed up if its not an even line!!

    Some sizes of stroke circles are drawn perfect, some has distractions in four "edges" - how to solve this?

    Files atached.

    When I extract them as fill strokes, they are going normal, but I need to work with strokes.

    Very gratefull for help!
