When I try to change the language for the whole document it doesn't work. I change it and when I open it again it has the old language.

Juan, what do you mean exactly by 'changing the language'?
Selecting all text objects and changing the value of the Language drop-down in the Character panel? Works for me...
Please provide some more details, and the file maybe also.
