Inconsistent stroke value
It didn't seem to be a problem before, but when I have two closed shapes that read and are supposed to have the same stroke value, but they appear to be completely different values.

...and even if it’s all OK with their appearances — a file is definitely needed to investigate it further then. You don’t diagnose a car by supplying a photo of it only, I guess :)

Have you checked what Appearance panel shows for these strokes, each one?
Path can have many strokes applied, and I’m suggesting at least one of these have two — that’s why I ask you to share the file. It’s vector art, after all, and Illustrator allows to make rendered look of it very complex and intricate with Appearance. -
I guess I could, but as you can see in the photo, I have both vector paths highlighted, but the stroke bar reads 1 point even you we can clearly see they appear to be different sizes.
