Object color defaults when selecting new colors
When selecting a new color swatch value from the menu (see image) often times when the document has first been opened or an object has not been selected during this session, any selected objects revert to the default appearance - 1 pt outline, black stroke, white fill - regardless of what they were before. Then you have to undo what happened and try again to apply your changes. It's a minor inconvenience, but it only showed up in the last 3 updates. A clean install doesn't fix this issue. This can happen just a single time, or multiple times with a file.

Colours of selected object change to default white fill and black stroke when trying to change the fill or stroke colour in Swatches in control panel. This happens when first touched the arrow of the swatch in control panel, after that the colour can be picked, but the object already gets recoloured to White and Black. Mac - AI 29.8.1

Color panel switches entire shape from transparent to white and changes stroke to black as soon as I click the dropdown arrow! This happens whenever trying to adjust a transparent fill.

I can confirm this. Thanks for reporting it faster than me, I really appreciate it.
Indeed, it happens once, and it defaults all the appearance. This happens for me usually when using a similar dropdown form the Appearance panel.
The dropdown usually appears torn out in the top left corner of the app.
Undo and clicking the button again helps. Usually happens once per session, but I had cases when it occurs several times in row.
