Color theme not matching color in document

Mac OS Big Sur 11.5.1
When selecting a color from a color theme, it appears faded/darker in the AI Document. Upon checking the RGB values, they do not match the values in the color theme. I have attached three examples plus what the document should look like (after manual input of the RGB values).

Feels like a color profile mismatch... but I have no idea to to get one for a color theme!

This *looks* like an RGB -> CMYK conversion, but the document's tab claims the document itself *is* RGB mode.
Voting for what appears to be a legitimate bug.
