Plug-in: UxpExtension.aip missing and needs deleting or updating??

Can anyone help? I cannot find this plugin to delete it??

This is a native plugin, and deleting it is not a solution.
I afraid you have to read this thread: https://community.adobe.com/t5/illustrator-discussions/unable-to-launch-illustrator-cc2020/m-p/11036678 and try the solution provided here.
