Hiding a layer doesn't hide the guides
Since the Update 27.5 of Illustrator CC all guides oaf any file are showing whether or not their parent layer is visible or not. In my Graphic template i have a base layer for guides of different target sizes, areas and columns which are organized on named layers for each type of guides to easily show/hide them.
since the the last update (27.5 AI on macOS) ALL guides are showing up whether or not the layer containing these guides is hidden or shown which results in showing all guides for 4, 5 and 6 column layouts as well as all text baseline-grid guides for different font sizes which makes the template unusable until I get rid of all layers I don't need at the moment but might need later!
PLEASE FIX THIS again!
A configuration modification has fixed this problem. It may take up to 24 hours for your Illustrator to show the changes resulting from this update.

The issue should get fixed automatically (if not already).
If you still experience it, you can try to force Illustrator to update the configuration, you can locate and delete the '.runConfig' file. On Windows it is located somewhere in 'C:\Users\[user_name]\AppData\Roaming\Adobe\Adobe Illustrator 27 Settings\[locale]\x64\' folder. To go to the folder, you might be required to allow to show hidden and protected folders — on Windows it’s in Explorer’s View > Hidden Items checkmark.
You can use the OS search to find the file by its name. I feel it is save to delete all of them at once — I did that, and deleted all of them, including '.runConfigRobin'. After the relaunch Illustrator rebuilt the file and the problem with the guides stopped for me. -

I'm having the same problem. I often need to hide specific guides so I make sure I organise my guides on specific layers so I can switch them on and off as necessary. This way I can have some guides showing and others hidden without having to hide or show them all. Today even if I switch the layer off the guides are still there. Please fix

When hiding a layer, the guides on that layer stay visible.
