The windows I last opened are forgotten every bootup. Only the project window opens by default. (Switching Workspaces doesn't open the windows it normally opens either. The windows that were opened do not change when switching Workspaces.) I have to open each window manually every bootup.
The behavior stopped after updating Illustrator.

When I see videos like this (or experience something similar myself) — I have a strong urge to punch something.
Thank you so much for sharing these. We need more evidence, all the time.
I have to change the status, but won’t make it Fixed or Resolved. -

Oops, I forgot to set the videos to unlisted. They should show now.

The windows (panels with extra tools or options) that I had open and the Workspace I last used (custom or default), would be forgotten every bootup. The Workspace wouldn't change what windows were open, the Workspaces couldn't be switched on or off, "Essentials Classic" wouldn't get automatically selected, and when clicking on any of the Workspaces it would turn on "Essentials Classic" without changing what windows were open or closed.
It used to give me an unknown error message. I soon fixed it by resetting my computer after updating Illustrator, then opening a previous project, clicking the home button, and the "Essentials Classic" windows suddenly opened on the home screen, then reopened the project and the windows stayed. After that, it's now working properly.
This issue seems to be fix. Thanks for your time!

By 'windows' you mean additional viewports one can open with Window > New Window, correct?
Can you explain then the exact workflow you use, and what exactly happens in which order?
If you mean panels... well, still please explain. Screenshots are also very welcome. -
