Under MacOS Sonoma 14.7.2. Illustrator 29.5.1 Cannot change color of a single word on a text box. It adds a very very slim outline without a add an actual stroke. The word is suppossed to be Brown.

Alejandro, judging by screenshots, you have an additional fill applied to your texts on object level, and it covers the individual fills for the character.
Please open the Appearance panel and see if the selected text object have a fill. If it does — click Clear Appearance small button at the bottom of the Appearance panel.
It probably happens because your Eyedropper tool’s settings are set to sample and apply appearance — check the options by either double-clicking the tool’s icon in the toolbar or pressing Enter with the tool picked (you have to not be in the the text editing mode). If you have both 'Appearance' options checked, this is most probably the source of your confusion. I suggest using these only with Appearance panel opened, to control what is sampled and applied. This can be tough to master, but can be quite useful once you do.
If it’s not the case at all, and something else is happening — please share more, and share the text file these text objects in it (you can remove everything else).
