Font Weights Change Upon Opening Files
When opening a file I previously saved, all the font weights switched around. Things that were bold were now light and light font were bold. A few fonts were switched out to different fonts altogether, even though the same font was still in the document, so it wasn't like it was unavailable.
I deleted any duplicate of the fonts and only had fonts from Adobe Fonts used in my documents, but the problem didn't go away. When opening an older version of the file that had the correct fonts weights, it would automatically change once I saved it.
I ended up just going to an older version of Adobe so I wouldn't have to worry about all my files being messed up (and now it's crashing a lot with I guess is the preferable problem.)

Hi Egor,
I don't have the file as a cloud document. I had it saved to a GoogleDrive I share with my client, so I was able to pull an older version from that.
I'm not sure if that messes up what you're hoping to find with the document. Let me know if you want me to send over what I have regardless. -

Aha! You say you 'ended up downloading an older version' — does it mean you work with a cloud document? .aic?
In this case — can you please share the link to a copy of this document with a team, so they can look into it? Ai 29.7.1 has a ton of font-related problems, and they are trying to find the root of it. I don't know how to reply to you directly, so hopefully you'll see my comment here.I looked at the other reported problem, and my issue is different.
1. There's no overflow text in my document. Everything is in its own, separate textbox.
2. Everything was fine in the document while I made it. I could change font weights normally. The problem didn't show up until after I saved and closed the file (and everything looked right while saving). When I reopened the file later all the font weights switched around. I ended up downloading an older version of my design file, since my current one was so messed up, and it looked fine when I opened it, but one I saved it and opened it again, the issue happened all over. I couldn't get it to stop, which is why I switched to an older version on Illustrator.

The problem was solved in the Beta build — can you try?
