If you are still having problems with this, please provide a test file and a small video showing the exact workflow and the combination of options used. This would help to start investigation.
An error occurred while saving the comment Feels and looks like a weird rendering issue. Does it help if you disable GPU, from View menu or Preferences?

An error occurred while saving the comment Sorry, not sure if I get it right... You export this image with Export for Screens / Asset Export? From that .ai file on the desktop? You mean you expect it to have a different name? Which one exactly? What are the exact steps to reproduce the bug? Please share the full story.

An error occurred while saving the comment Let's try to figure this out, starting with Photoshop.
This place is not for Photoshop's issues, but Illustrator only (the correct one would be https://community.adobe.com/t5/photoshop-ecosystem/ct-p/ct-photoshop) — but I personally can comment on that.You can still save JPGs in Photoshop if you wish. First, you can access the format by using 'Save a Copy' command inserted of 'Save As'. Then, you can go to preferences and revert the behavior (more or less).

Does it reset the current workspace for you every time you start Illustrator? Or on every update?

Do you use workspaces? Tool panel presets? -

ご報告いただいた現象ですが、最新版「ver.26.2.1」でも再現できませんでした。
ご使用のマシンが「macOS 12.1」ということですが、現時点では Illustrator はサポート対象外となっておりますので、ご了承ください。

1. What happens if you switch to CPU in View menu or disable GPU in Preferences?
2. If it doesn't change anything, van you please send this file over to sharewithai@adobe.com (put the link to this issue in the email's body, https://illustrator.uservoice.com/forums/601447/suggestions/45070219), or share it here, if you are allowed or willing to make it public. Perhaps it's a local problem -

I am afraid it's hard to investigate this with no files to test. If you are allowed, please share them here directly, or send over to sharewithai@adobe.com (in this case add the link to this report, https://illustrator.uservoice.com/forums/601447/suggestions/45112987)
As a workaround for now I can offer to try a script, https://github.com/shspage/illustrator-scripts/blob/master/batchTextEdit.jsx
I use it myself as a common tool.
