The issue seems to be fixed in the latest version of Illustrator.
Please try to test it and reply back if it works as expected for you.

Nothing happens.
I remember it worked in previous version.

I am happy to share that we have fixed this bug in our latest release – 26.1.0 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

There’s a plugin, PathScribe, from AstuteGraphics, that allows that and more, any imaginable operations for handles. At least some of its power should be available from the box.AdminEgor Chistyakov

Definitely a rendering issue.
first of all, try to disable GPU rendering, View > View Using CPU.
If it helps, as a workaround disable it completely in Preferences > Performance > GPU Performance tick.
Then please provide the exact info about your graphics card (you can do these steps to check it: https://www.tenforums.com/tutorials/132824-check-what-graphics-card-gpu-windows-pc.html)
Then... we'll see how it goes :/ -

Mapping is now available in Beta. There are some known issues with it, but even more unknown ones, so the team encourages you to try it and write back about your experience with it, to help to make it better.
An error occurred while saving the comment Mark, you can try the draft way of mapping in the most recent Beta version. You can access in dedicated section of Creative Cloud Desktop. Since you were the one who specifically asked for it, I personally want you to try this first attempt, and pick it to pieces, to make it better.

Despite the claim, https://twitter.com/nnandkeo/status/1464100673142738946, it actually does not allow to select tools that are already in the current toolbar, as a sub-tool or a top one. -

See, the top one shows the dimensions of the live shape, the width and height of the rectangle.
The bottom one shows the dimensions of the path... but with the weight of the stroke accounted, because you have Use Preview Bounds option turned ON in Preferences > General. So the measured size of the path with its stroke is 1pt larger than the size of the live rectangle shape. -

Ah, I see the image now.
Judging by the filled appearance marker for the violet rectangle, it might have the blend mode applied to it, something like Multiply or Darken. Can you select it and check Transparency panel?
