This fix is included in Illustrator v29.8.2.
If you reopen files that were not saved while the font change issue was present, the problem should no longer occur.
Please let us know if you continue to experience the issue in any new files created with v29.8.2.

An error occurred while saving the comment Hello. We’d like to ask everyone here to test this in the latest Beta build (30.0.0.48 or later).
Please reopen an original .ai file (saved before the fonts were unintentionally changed) and let us know in the comments whether the issue is resolved or still occurs.

お世話になっております。その後、フォントの表示はいかがでしょうか？不具合が発生したIllustratorのバージョン情報などの詳細をいただけましたら、原因などエンジニアに確認を取れるかと思います。
ご投稿いただきました時期や不具合の事象から推測いたしますと、v29.8.1の可能性が考えられますが、その場合v29.8.4にアップデートいただきますと問題が解消されます。
