This problem is reportedly fixed in the latest Beta Build 30.5.0.18. You can update and test if it’s truly gone.
However, please not there are some known issues with this particular build:
- Opening recent files from Home Screen Recent section is not working (opening recent files from File > Open Recent Files works fine).
- Generative Expand does not open its own HUD when used after Generate Vector, Generative Shape Fill, or Sketch to Vector. Instead, the previous tool's HUD is displayed and Generative Expand remains inaccessible. Workaround: Ungroup the generative content first, then apply Generative Expand.
- Half of Astute Graphics plugins can’t get loaded. Both teams are now aware of the problem.

おそらく円グラフツールでカンバス内をクリックして表示されたダイアログ内に50mm×50mmと入力して作成した円グラフの直径が43.287mmだといいたいのでしょう。
これはIllustratorにグラフ機能が付いた時からの仕様です。指定した50mm×50mmはグラフ領域の大きさであり円の大きさではないことは、多くのユーザーが当たり前だと思っていることです。

修正は最新の30.3一般リリースに反映されています。アップデート後、問題が解消されているか確認し、引き続き問題が発生する場合はご報告ください。
開発チームによると、macOS版Illustratorのフォント処理方法を変更し、一貫性を向上させ、サポートされていないシステムリソースへの依存度を低減したとのことです。その結果、Appleのガイドラインに従い、Illustrator 30.3以降ではシステムフォントが使用できなくなります。
The fix has been pushed into the latest 30.3 general release. Please update, check, and comment back if it still happens.
According to the team, they changed font handling in Illustrator on macOS for better consistency and reduced reliance on unsupported system resources. As a result, system fonts won’t be accessible in Illustrator 30.3 and later, according to the Apple’s guidelines.

しかしながら「必要システム構成」に24H2の記載がないため、Windows 11 PCの導入に不安を感じている人が少なからずいます。
そのため、問題がないのであれば早急に記載を追加してほしいということです。CS5 omachi

In the latest BETA 30.0.21, we’ve improved the ‘Save As’ workflow.
Now, instead of remembering the last used format, the default will always be .AI.
We made this change to ensure that your files are consistently saved in the native Illustrator format, which is the most reliable option for preserving full editability.

It seems like this issue has been finally addressed in the Beta 30.6.0.11. As reported, the only format that isn't affected by the fix is EPS.
Please try to update and verify it if it finally works as expected.

3. 想定していた結果
変形パネル（ウインドウ＞変形）に値が表示され、編集できる
4. 実際の結果
何も表示されない
という意味と思われます。
グラフは変形パネルで変形することはできません。グラフの中に値を持っており、データを変更することでグラフの形状が変わる特殊な図形だからです。
変形パネルで変形したい場合はグループ化を解除する必要がありますが、そうすると保持していたグラフデータは失われます。
値の変更がないと決まっている場合にグループ化を解除して変更すればよいでしょう。
