Text with missing fonts do not always highlight
Even though "Highlight Substitute Fonts" is enabled in Preferences, text is not always highlighted when a font is missing. Expected behavior is for text with missing fonts to be highlighted in pink when this feature is enabled.

I also had this issue pop up for me just recently when I was picking up a project from a colleague and because of this the project went to production with the incorrect font. Very frustrating any way to avoid this in the future or to fix this issue would be appreciated.

I'm also having the same issue on several computers and versions of Illustrator. Some, not all, text blocks will not show the missing font highlight and will also substitute another font without warning, if we outline the font that error goes unnoticed on large files with small text.
I'm able to create a new text box in the file, and a new text box with the original non-highlight text pasted into it and everything works as it should.My hunch is that there was a time when an older version of illustrator that the text box was created and over time this text box has been included in the various art revisions. The newer versions of illustrator are not detecting the old box which leads to these issues.

I wish I could be so lucky; my fonts are not only not pink, but completely disappearing.
The font for the address is apparently not activated and therefore not showing up as text AT ALL in the file. The Find Font window is also completely broken so I can't even find the missing font name to resolve it.
