Unembed for Black and White Bitmap
Adobe Illustrator 22.1
macOS High Sierra 10.13.3
The Unembed button is grayed out for Black & White Bitmap images. The workaround is to Rasterize as Grayscale but this is leading to unexpected results. Parts of my images are disappearing, please fix the bug and add this feature.

Yes, and when opening illo file later in different folder results in the file missing. So I am not sure if it is even properly embedded despite it showing embedded icon.

Yes, Export> Export As degrades the image as well as the Export Asset option.
It's been 3 years still no updates on this. If this isn't available, though it would be a Photoshop feature, it would be nice to be able to extract grayscale and black and white bitmaps from PDFs from there, it would solve the issue from the other end I guess.

This would be great to get resolved. Unembedding these images through the lossy means of exporting to a raster format degrades the image.

You can Export> Export as.. and select .bmp as your file type, select color model Bitmap, and set your resolution as you want. That's what I did to get the file I needed

That's insanely inane bug! And of course I came across it today with 75 PDFs that I need to extact B&B bit maps from.

Just updated Illustrator to 25.0 on Windows and this is still an issue...
I just need to export the Image, I don't even want to use it in Illustrator (I actually need it in Photoshop.)
I don't understand why "Unembed" or "Edit Original" are greyed out, makes no sense.
