CMYK Colors change by themselves randomly
Watch as I simply keep trying to specify a color in a CMYK document. Simply changing the hex code, then deselecting the element, then double click the fill box to open the color, and sometimes it stays, sometimes it changes. I change it, it changes again. I need this to work 100% I can't have colors randomly changing on me after I specify them. I can also trace similar color problems back since v6 or so - had many color inconsistencies between illustrator versions, this constant color shift battle has to be fixed

@Raul, what is you document’s color mode? When you create a swatch — do you you Process Color or Spot Color type?

I've been having this problem since CC 2019. I will type in the CMYK values manually and hit OK. When I click on the color and re-open the color picker, my color values for CMYK change. I have even tried saving the color as a swatch to hopefully lock in the color. When I open the color picker again, the value have changed. I'm on 26.0.3 for Windows.

I've had a similar issue where I build a document for print in CMYK but if I paste elements in from a RGB file the object can't be changed to CMYK. Any time I try to change the colour it stays in an RGB colour space. This shouldn't be happening though, especially since it's a simple vector object. It's driving me crazy!
