Problem with Type on a Path after ver. 26.1 update
Prior to updating Adobe Illustrator to ver. 26.1, a drawing with Type on a Path appears as it should. After the update, the text is positioned in a different place along the path. This is confirmed on a second computer. The same file opened on the second computer prior to the update appears normal, and after the update, the text is shifted.
I am happy to share that we have fixed this bug in our latest release – 26.2.1 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

If I made a text on a path (in this case is a circle), after re-open the file I found the circle with a different dimension, usually bigger.

Yes, perhaps something gets read and interpreted in a wrong way.
Do you still have those original files that get opened wrong? If yes and you are allowed to share them for developers for the investigation, can you send them over to sharewithai@adobe.com?

Yes! It is only on a couple, I have now opened some recent files and they do not do this. But maybe it is because the slightly older files were saved in an "older" version? I just know they did not do this a month or two ago.

This is weird.
So you had a bunch of files with live text, and now when you open them , it looks like this, flipped, am I getting this right? -

Before the latest update we were not having this issue with our files that we have the type on a path tool use on, but since, it now shows up in the file like this (Right) when it should show like the left image which is how it was originally uploaded... Now I am having to outline when it is unnecessary.

Latetest update missalign all my old documents that used any kind of rotated or centralized type on a path (often in a circle).
Is that the new correct code? or is it a bug? if I change and fix all my artworks, will it missalign again once you fix the code or is it going to stay that way?

Further, it's difficult to position type on an elliptical path. While dragging the handle, the text jumps between the expected position and a position at 180 degrees around the ellipse. It's especially difficult to position the text at the top or bottom of the ellipse due to this jumping behavior.
Further, all of the behavior described in this bug report happens with files created from scratch in Illustrator ver. 26.1.

Same thing here with a small exception. Within the same file, It shows up wrong in one place but correctly in another place.

26.1にアップデート後、以前制作したデータを開いたところ、円形に「パス上文字ツール」で入力した文字の角度がずれている。
アップロードしたデータでは「乙房こども園」の文字が180度回転してしまっていて、修正しようと文字部分を移動させようとしたところ、90度移動してしまった。

The same thing is happening to me. I'm on a Macbook Pro M1, OS Monterey 12.1. Illustrator's 26.1 update appears to have messed up the orientation of type-on-path in every file I've looked at so far. Ugh!
AND: removing the preferences folder and restarting AI didn't fix the issue.
