Adding presets for the Dimension Tool is in the plans.

The Beta 28.4.0.7 now create live dimension objects, that track and follow the changes to the measured objects: resizing, rotating, moving...
As for now, moving only dimension breaks the link and expands the dimension (hopefully will change, and break the link only).
Moving an object with its related dimension currently expand the dimension as well (hopefully won’t do it either).
Please test the change and share feedback — it helps a lot!

View > Trim View command does this. By default, it does not have a hotkey assigned to it, but you can map it to the one you prefer in Edit > Keyboard Shortcuts.

We have released an update (version 28.6) which takes care of this particular ask. Please upgrade your Illustrator application to latest versions and let us know your feedback.
An error occurred while saving the comment Josh commentedIf they are going to keep the AI in it at least put it in a panel that makes sense for what it is. It does nothing for properties of my text so I should not see it there and I don't care that you can collapse the menu, it's still there taking up space for more important things on my documents.

You can disable this panel via Window > Contextual Task Bar menu command.
The current Beta 28.5.0.34 has a bug though, that enables it back after Ai is relaunched. If you are using normal build, it should just work.

I am not OP but I found this doesn't exactly do what I was hoping, mainly to preview the work without the auto spell check showing (I know it can be turned off but then it's two things I have to toggle instead of one). It does hide everything else off the artboard which is nice to know about.
