I use the 3D in Illustrator all the time. I much prefer what you are now calling "Classic" to the new 3D for several reasons:
1. The whole point of using Illustrator is to create vector art. So I want the look and functionality of vector art and don't need the materials or ray tracing (and if I do, I just use a 3D program which has more capabilities).
2. On the "new" 3D, if you expand it, you are left with only an image without any of the vector information. I use the "Classic 3D" all the time to generate vector shapes by expanding the 3D elements. I need that for my work flow and the "new" 3D is missing that feature.
3. To see what a truly great 3D experience can be in Illustrator, please look back at Adobe Dimensions. That was an amazing program that allowed full placement of multiple objects in a 3D space (as opposed to the current single object limitation in both new/classic). It retained vector information and the clean look of vector art. If you could take the old Adobe Dimensions code and add it as plugin to illustrator, that would solve all my clumsy work-arounds to get multiple objects to look as if they inhabit the same 3D space.
4. Please do not eliminate "Classic" 3D! This is an important feature to me. Ideally, I would like to see the features of "Classic" expanded to include more features that previously existed in Adobe Dimensions. Thanks!

Interesting ideas. Another way to implement the first concept would be to have a "remove points brush tool" that removes points as you brush over them (and that tool could have user definable width like other tools) . Agree that the current tedious single point method you've described above a pain in the a@$.
Though one thing I just discovered (when pondering your suggestions) is that you can select a bunch of points (by any method) and then use the menu item: Object-->Path-->Remove Anchor Points. That gets close to your end result of the first tool (though it does make a slightly curved path as opposed to the pure straight line you're looking for).

Please try to disable Preferences > Selection & Anchor Display > Zoom to Selection option and see if it solves the problem.

Getting the same random zoom bug with the trackpad on my MacBook Pro. I use the pinch to zoom with my left hand while working in illustrator and my right hand on the mouse all the time. In the current build, this doesn't work because the pinch to zoom just jumps all over the place. Definitely something that's broken my workflow. I've been too busy to rollback, but this is a big enough one to warrant that. Hopefully they can get this fixed soon to save me the hassle...

Sean, the new Beta release have an option to Intertwine objects, giving you a way to make knots like this. It won’t work exactly the way you described, especially for multiple strokes, but it’s going there.

The new 3D effect does not respect the "Scale stroke and effects" preference. When scaling an object the depth remains the same (rather than scaling with the object). The bevel does seem to follow when being scaled, but it's hard to tell since the depth isn't changing.
