欧文フォントでも発生しますね。
欧文フォントで任意ハイフンが一律にグリフ表示されてしまうのはかなりマズイです。欧米圏からフィードバックされていないのでしょうか？ もしかして日本語版Illustrator固有の現象？任意ハイフンの理想的な実装は、文字パネルの言語に依存するというものです。言語が日本語なら任意ハイフンは無効で常にゼロ幅のまま。しかし言語：日本語は文字／段落スタイルでしか設定できない謎仕様の壁があって、現状このあたりは混沌としてしまいますねぇ。
追記：
代替Unicodeのハイフンではなく、フォントのcmapでU+00ADにマッピングされているグリフがそのまま表示されているのだと思います。

Illustrator 製品版フィードバックにご協力いただきありがとございます。
ご報告いただきました問題につきまして、再現が確認できました。
「パスのオフセット」効果が適用されている文字の中マド部分の直線と、「Y軸 = 0」のラインが重なる場合に発生するようです。
簡単に「田」や「A」の字で再現できました。今後の開発進捗などはこちらでご報告させていただきます。

I am happy to share that we have fixed this bug in our latest release – 25.0 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

v24.3 is a failed release. As a result, many users have lost trust in the Illustrator team.
What users are concerned about is not the bug itself, but the Illustrator team's failure to fix it.
This bug was serious. But the Illustrator team left this alone. Users were disappointed that the critical bug in v24.3, which was supposed to be the final stable version, was left unattended.v24.3は失敗したリリースです。その結果、多くのユーザーがIllustratorチームへの信頼を失っています。

I am happy to share that we have fixed this bug in our latest release – 25.4.1 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

I think v25.3.1 is a broken version with some other serious bugs. Roll back to v25.2.3 is the only best workaround.

To work around this bug, remove the space character from the swatch name.

The workaround for this is to update to the latest build, 25.3.1, which doesn't contain Bridge related changes for Mac ARM — that's why this error is happening.

This bug occurs in TrueType (.ttf) fonts. OpenType fonts (.otf) do not occur.
In v25.3.1, if you apply a line to the outline of a character and apply round caps, a strange dot will appear in spaces. In v25.3.1 there is a strange dot in space characters of the ttf font. Perhaps optical kerning treats this strange dot like a period, narrowing the space between letters.Japanese:
このバグはttfフォントで発生します。otfフォントには発生しません。
v25.3.1で、文字の輪郭に線を適用し、丸形先端を適用すると、欧文スペースに謎の点が出現します。おそらく、オプティカルカーニングはこの謎の点をピリオドのように扱い、文字間を狭めてしまうのでしょう。monokano

これ、単純に.ttfで発生する現象ですね。.otfでは発生しません。

Illustrator 2021 v25.3.1
再現しました。たしかに点が「現れるフォント」「現れないフォント」があります。
両者を比較してみたところ、欧文スペース（U+0020）のグリフのGIDが 1 ではないフォントに点が現れるようです。
Adobe-Japan1の和文フォントはすべて欧文スペースのGIDが 1 なので点は現れません。
一方で、.ttf は仕様上、欧文スペースのGIDが 1 ではないので、欧文／和文フォントともに点が現れます。追記：
よく確認したところ、GIDは関係ありませんでした。
単純に.ttfフォントに出現する不具合です。.otfでは出現しません同様に、.ttfフォントに出現する不具合が下記にあります。

.ttfフォントにオプティカルカーニングを適用すると、v25.3.1で欧文スペースの幅がかなり狭くなってしまいます。
おそらく、v25.3.1で.ttfフォントの欧文スペースに「見えない謎の点」が出現し、オプティカルカーニングでその謎点がピリオドのように扱われ、詰められてしまい、そのため欧文スペースの見た目の幅が狭くなってしまうのでしょう。 -

任意ハイフンは欧文組版用の文字で、これが常にハイフン表示されてしまうのはかなり深刻な不具合です。いずれ直るはずです。直らないとやばい。
