Colors swatches are converted document color mode, Illustrator’s supported document color modes are RGB and CMYK. Please try the suggestion provided by Ton.

Taking a CMYK-Color, contert it to Lab, later convert it back to CMYK and you get messed up values! InDesign is able to cope this since 2019 with 3 decimals and it works fine. Illustrator only supports spot-color-books with two decimals

Converts the Color Type to Spot and changes Lab Color Mode to the Document color mode.
