"View using GPU" greyed out since Illustrator 2021
Since we have updated to Illustrator 2021, on one of our machines (Mac mini 2018) "View unsing GPU" (CMD+E) is greyed out and can’t be activated. GPU IS activated in the Illustrator Preferences! Using Illustrator 2020, this function works as usual.
An other glitch, that we noticed on both of our machines (the 2018 mini and a 2019 iMac): When opening a document in Illustrator 2021, the window turns black for a moment until the document is shown. This does not really cause any problems, it is just strange and does not occure with Illustrator 2020.

Ah, such a pain. Just started happening to me - the biggest change I made recently, was a system update to big sur (and I held of for 6 months, thinking all these kind of bugs should be sorted).
I'm not sure what the triggers are for me - seems to happen randomly when panning.
I only have to close and reopen the doc for the GPU to work again (ie, I don't have to quite Illustrator completely.
I rolled back to Ai 25.2.2 from 25.2.3 (no issues before big sur), but didn't seem to fix.

The hole GPU support with Illustrator 2021 is broken on the Mac with Big Sur. (Mac OS 10.3 + Ai 25.2.3) GPU support works with a blank document. As described by Oliver the GPU support crashes reproducibly. The triggers are: switch on rulers > no GPU, open document with guides > no GPU, double click on grouped elements > no GPU. I repeatedly wrote to Adobe but several upates went by without help. Every (!) colleague I have spoken to has struggled with the same mistake. Both of my Macs (Intel & M1) have the issue. The software quality Adobe delivers here is an outrage for paying customers.

'View using GPU' keeps getting grayed out with embedded images.
Illustrator 25.2.1 on macOS Catalina, 16" MacBook Pro with AMD Radeon Pro 5500M 8GB.
An annoying workaround, that works sometimes is to make sure all images are linked instead of embedded. Save, close, then reopen file.

It is getting even stranger. On the iMac, where the GPU preview seemed to work, I was editing a document with GPU preview active and when I place a tiff image in my artwork, Illustrator instantly switches to CPU preview and GPU preview gets greyed out.
Adobe, before adding any new features, that nobody needs, PLEASE fix the basic functionality!!!
And yes, I am using v 25.2...
