The solution is pushed into Global Availability build 28.6.
PDF is now available as type in File > Export > Export As dialog.
However, File > Adobe PDF Presets menu, similar to one InDesign has, to allow even quicker export, is absent still.

"Blend" is a feature often used for blending paths or colors. We also can blend the settings of effects, it's a great help to create variations efficiently.
Just like it, I think, it'd be handy if we could blend not only Live-pie, but also Polygon Side Count and Corner Radii.
「ブレンド 」は、パスやカラーをブレンドする際によく使われる機能ですが、効果の設定値もブレンドの対象になります。私は効率よくバリエーションを作るのにとても重宝しています。
これと同じように、扇形の角度や多角形の辺の数、角丸の半径もブレンドの対象になればとても便利だと思います。

I am happy to share that we have fixed this bug in our latest release – 27.0.1 which is available worldwide now.
Going forward, our goal is to fix as many top User-Voice bugs as possible and as frequently as possible. Given the nature of the fixes, some of the bugs will take a longer time to fix, but we are on it.

Illustrator team is working on a fix for this issue. Meanwhile you can use the below workaround to paste the table as it was before.
Before you copy the table in InDesign, create a path object along with table and then copy from InDesign and Paste in Illustrator. This forces the PDF route for copy/paste between ID and AI

私の環境でも同じことが起きています。
InDesignで表を作り、Illustratorにペーストすると以下のようになります。2022…テキストは行単位で分割される。表の体裁は維持される。
2023…テキストがペーストされるが表ではなくなる。以前のバージョンで出来ていたことが最新バージョンで出来なくなってしまうと困る方も多いのではないでしょうか。
［回避策］
InDesignで何かほかの図形と一緒にコピーしてからIllustratorでペーストすると、これまで通りの体裁でペーストされるそうです。（他の方に教えていただきました）

I have the same problem with Illustrator and InDesign.
When I created a table in InDesign and pasted it into Illustrator, the results were as follows.2022 → Text is split by line. The appearance of the table is maintained.
2023 → Text is pasted but not a table.It is sad that what was possible in past versions is not possible in the latest version.
［Workaround］
Copying a table with some shapes in InDesign, we can paste it as a table in Illustrator 2023. I was told by another Japanese user.hamko1114

私も同様の現象で困っています。
アプリケーションウインドウを小さくして使用しているケースでは、オプションダイアログの大部分が隠れてしまいました。環境設定を削除しても状況は変わらず、保存をくり返すたびにダイアログが左へズレていきます。
また、UIスケールも変更してみましたが改善しませんでした。Illustrator 2022（26.5）

この問題はバリアブルフォント以外でも再現します。
フォントのデザインにもよりますが、細いウエイトのフォントを小さなサイズで使用したときに顕著です。
悲しいことに、PDFにはこの状態のまま書き出されてしまいます。
既にEgorさんが述べている通り、テキストに「オブジェクトのアウトライン」効果を加えることで回避できます。しかし、そこまで注意して作業できるユーザーばかりではありません。
テキストで作成するクリッピングマスクは楽しい表現ができるテクニックのひとつです。ユーザーが制作作業に集中できるよう、問題が解消することを願っています。

This problem is reproduced even with non-variable fonts. Depending on the design of the font, it is more noticeable when thin weight fonts are used at small sizes. Sadly, the PDF will be exported as-is.
As Egor already mentioned, it can be avoided by adding an "Outline Object" effect to the text. However, not all users are that careful.
Clipping masks created with text are fun to use. I hope the problem will be resolved so that users can concentrate on design.
