The search bar in the top right corner is gone and is replaced with a button with a magnifier icon — it now calls the new Discover window.

As stated in the article linked below, Pantone’s licensing with Adobe got changed.
Due to this change, customers will need to purchase Pantone Connect licenses to access Pantone colors in Adobe Creative Cloud products.

The most recent version finally has the Object > Distribute menu added.
Now both Align and Distribute commands can be accessed via menu and have assigned keyboards shortcuts to them.
The order of the commands though seemingly matches the one the panel has: horizontal first for Align and vertical first for Distribute. Also, Align To and Distribute Spacing commands are still missing in top menus, so please keep voting here to make them added too.

The latest Beta Build 29.0.38 now removes the default F12 keyboard shortcut for File > Revert command.
This will only affect those who use sets with F12 not assigned to anything else. A soft message will inform users about the change.
If you choose to use F12 for Revert, you can assign it back using Keyboard Shortcuts dialog.
Let’s hope nobody looses anything anymore because of accidental Revert!

The intended way of setting a default font is to edit document profiles. These files are located in folders like 'C:\Program Files\Adobe\Adobe Illustrator 2023\Support Files\Required\New Document Profiles\[language]\' on Windows and 'Macintosh HD > Applications ▸ Adobe Illustrator 2020 > Support Files > New Document Profiles > [language]' on Macs.
Make a copy of the one you want to use someplace else, open it in Illustrator, make your changes, replace the original and then use it when creating a new file.
There are many tutorials on the web about managing these, like this one: https://productivista.com/new-document-profiles-saves-your-default-settings/
However, this way indeed is not the most discoverable. Please continue to vote and leave comments if you want this to be improved.

Ai now displays A4 as a proper 210×297mm (if Display Print Size at 100% Zoom option is set in Preferences) — you can check it with a ruler next to a screen.
This messes up 100% for Web-based documents, unfortunately, and this is yet have to be resolved.
InDesign, however, displays it a bit smaller… (this should be asked from InDesign developers).
Photoshop does it almost perfect when you choose View > Actual Size.Brian supported this idea · -

Is it just me or does it seem odd that this idea was posted by anonymous, then got two additional comments by "other anonymous" contributors one minute apart saying they love the idea.
I agree with Egor this is distracting and unattractive. I have never found the size of the asterisk difficult to see.
