Text always shows as black
Sometimes, when I apply color to a text box (using the swatches or the eyedropper) the color shown on screen is black even though in the Appearance panel the Fill is the one I applied.

Hi,
The attached screenshot displays the FILL color underneath the CHARACTERS in the APPEARANCE panel therefore any change applied to the FILL will not be displayed, to display it correctly please move the FILL color row on top of the CHARACTER row (Click & Drag) in the Appearance panel.

I just started having this problem the past 2 days on Mac OS X 10.14.3. Just updated my OS this morning hoping that would fix this issue but it did not.

After the v23 update (23.0 and 23.0.1) the eyedropper tool wont pick up fill colors to the selected object, and fill colors have stopped working altogether. See attached file. The fill color should be red, and it appears black. No matter what I do, the fill color will never change, whether it be from the swatches pallete or the eyedropper tool or adjusting the fill color manually.
I was running 23.0.1, and reverted back to 23.0, but this problem didn't go away. I'm on macOS 10.14 Mojave.
Please help, this is holding up a very urgent project.

Is this file specific? How did you created this text object?
Can you please share a small video from scratch (blank new document) which displays the issue?

OK, I see what you mean, but why does it happen?
It never happened before the last CC 2019 update, and even now, when I tried to quit Illustrator, reopen and coloring the text, I still have the same problem. As if this is the default... and this is just frustrating.
