Thanks for sorting out this confusing situation, Egor!
I’ve been using the Shape Builder Tool for years and didn’t know this option existed.
If “Pick Color From: Swatches” is the default, “Cursor Swatch Preview” should be on as well.
Alternatively, “Pick Color From: Artwork” could be the default—it’s easier for most people to predict the result.Also, not being able to change the selected object’s color from panels like Color while using the Shape Builder Tool isn’t great. It’s confusing and should be improved.

Everyone - we want some more information about this issue.
Is any export (PNG) done from Illustrator for any such (glitched preview) files showing the same thumbnail issue or not?
Or, is the issue happening only with the thumbnail of the file as seen in the Mac / Win folder preview or while placing into another application?

Based on some recent comments reopening this. The comment, though, are confusing as of now and do indicate to right version where a break in functionality could be established and different people reporting different behavior with same version. Team will investigate this again.

In the latest BETA 30.0.21, we’ve improved the ‘Save As’ workflow.
Now, instead of remembering the last used format, the default will always be .AI.
We made this change to ensure that your files are consistently saved in the native Illustrator format, which is the most reliable option for preserving full editability.
Please try out he changes by downloading the latest BETA from the Creative Cloud and let us know if it helps you or not.

It seems like this issue has been finally addressed in the Beta 30.6.0.11. As reported, the only format that isn't affected by the fix is EPS.
Please try to update and verify it if it finally works as expected.

Why is that? In my environment, Undo worked correctly in all cases.
I can't determine the cause...
* macOS Sequoia 15.7.7
* Tested with the 2025 release version (29.8.7), 2026 release version (30.3), 2026 public beta (30.7), and 2026 pre-release (30.6); all produced the same result.
* The result is the same whether converting RGB → CMYK or CMYK → RGB.
* In every version, the History panel records the action as "Document Color Mode Conversion."
* Whether using Command+Z or Undo from the History panel, the color mode reverts as expected.

なぜか私の環境ではいずれも正しくundoできました。
原因がわかりませんね…
- Mac OS Sequoia 15.7.7
- 製品版2025（29.8.7）、製品版2026（30.3）、パブリックベータ2026（30.7）、プレリリース2026（30.6）で確認してすべて同じ結果
- RGB→CMYK、CMYK→RGB、どちらに変換しても同じ結果
- どのバージョンでもヒストリーパネルには「ドキュメントカラー変換」として履歴が残る
- Command+Z、ヒストリーパネルどちらでundoしても、意図通りにカラーモードが戻る
