Blending paths with Width profiles works wrong
Create two lines.
Apply width profiles to both of them.
Blend them.
Ai will generate steps that have uniform profiles instead of intermediate.

Based on the information provided by Margaret in the last comment, the issue is not specific to Illustrator but related to Astute's Dynamic Sketch tool. Thus closing the issue for now.

Hmmm!
I am trying to reproduce this and I can only reproduce this with variable-width strokes drawn with Astute's Dynamic Sketch tool, which can turn pressure data into width data. Guess it's their bug, I will pass it on to them!

I assume this is what is meant by 'blending art brushes':
current behaviour is on the left,
the mostly expected one is on the right. -

This still does not work for paths that have an art brush.

Following is the result of investigation:
This issue happens with blends created when stroke with flat edge is applied to one path then later variable width profile is changed.Workaround: Select the blend object, Release the blend, change path's Variable width profile to Uniform, and then apply desired Variable width profile again, Now try apply Blend.

I've recreated this on 2 machines. Mac OS 10.13.4.

I was trying out the new quick tip that was posted on youtube for "linocut" blend lines https://www.youtube.com/watch?v=yCyE91-D-KI
I was trying to blend between a variety of line types and follow along with the demo and noticed that my up-to-date copy of illustrator is not doing any tip interpolation.
I downloaded the demo file from the video page and the tip blending works, but in the photo I provide shows my attempt to blend on the right and the tips are square.
