Enclosed mode is the first mode in Ai to use a single tap of a button instead of holding one. 'E' key should be pressed once you start dragging the marquee, during drag operation.

Try this way: press 'E' after you start doing the marquee, just a single press. You will see [] beside the cursor. Hope this helps and please let us know if it works. Thank you! -

Latest Beta Builds now allow to hide units for dimensions.
Toggle the option in the tool’s options dialog to force it for new objects, or disable it in the Properties panel for existing and selected dimensions.

As per the comment inside, an ability to hide units for dimension objects is introduced in AI Beta build 28.3.0.47.
No more news so far on other parts of the request.
Speaking of which — if possible, please try to report/request one entry per post, to better track all the feedback. Thanks you for your participation.

プロパティパネル内寸法の「単位を隠す」にチェック
または
寸法ツールの設定から「単位を隠す」にチェック（添付画像ご参考ください）。
ベータ版アプリは、Creative Cloud内の左側タブ＞ベータ版アプリからご利用いただけます。

ご要望1の先端位置の選択について、開発チームから質問があり、お手隙の際に教えていただければと思います。
こちらの「寸法補助線に対して線の芯に「●」の中心を配置」というのは、Rika様の実際の業務でこの仕様で、通常図面を作成される、ということでしょうか？また、簡易図面はどのようなものを指しているか（パッケージ図面、間取り図等）差し支えなければ教えていただけますと助かります。

「寸法線に対する数字の位置ですが、寸法テキスト下部に表示されている「位置」で「寸法線とオブジェクトの内・外」と「中央・左・右」に変更することができますのでお試しください。

添付していただいたスクリーンショットから推察するに、ブラウザはChromeをお使いでしょうか？その他のブラウザの場合にも同じ事象が発生しますか？
また、エラーが起きた際に実行していた手順がわかれば合わせてお知らせください。
